Aloo Gobi

I love having formatting issues, lol. Le fuck. Anyway. This one is easy and if it feels like you are using a shit ton of spices, well, you are. And thats’s cool. Its how we roll.

Ingredients

2 tbsp vegetable oil

1 onion, diced

1 tbsp fresh ginger, grated

3 cloves garlic, minced

2 tomatoes, diced

1/2 tsp turmeric

1/2 tsp coriander

1/2 tsp cumin powder

1/2 tsp garam masala

sma1l pinch cayenne pepper

3 medium potatoes, cubed

1 small head cauliflower, cut into florets

1/2 cup water

Salt to taste

Fresh cilantro for garnish

Instructions

Heat oil in a large pan over medium heat. Add all spices save turmeric and toast until fragrant, about 30 seconds or so.

Then add onion and cook until softened. Add ginger and garlic, cook for about 1 minute then add tomatoes and all spices again in the same amounts. Cook until tomatoes break down, about 5 minutes. Add potatoes, cauliflower, water, and salt. Stir well.

Cover and cook for 20-25 minutes, stirring occasionally, until vegetables are glistening and softened.

Garnish with cilantro and serve with rice or naan.
