Kale Salad
Ingredients
1 large bunch kale, stems removed and chopped
3 tbsp olive oil
2 tbsp lemon juice
1 tbsp maple syrup or honey
1 clove garlic, minced
1/4 cup Parmesan cheese, grated
1/3 cup toasted almonds or walnuts
1/3 cup dried cranberries
Salt and pepper to taste
Preparation
Place chopped kale in a large bowl.
Whisk together olive oil, lemon juice, maple syrup, garlic, salt, and pepper.
Pour dressing over kale and massage with your hands for 2-3 minutes until kale softens.
Add Parmesan, nuts, and cranberries. Toss well and serve.
