Boston Creme Waffles with Fruit

Yes, there honestly is a national Boston Crème Pie Day. But its nice to shake it up and these waffles are sinful. Once you know how to make a pastry crème like this, you will find a zillion ways to spread it over anything….

You will need to prepare this at the very least 2 hours before you serve it. Overnight is optimal, so plan ahead.

In a saucepan, bring to a boil:

1 tablespoon butter

2 cups milk

2 cups light cream

In a separate bowl, whisk:

1/2 cup sugar

3 1/2 tablespoons cornstarch

6 eggs

Whip that until ribbons start to form.

Add it to the boiling pan of dairy and come to a second boil. Cook for 1 minute.

Pour into a bowl and cover the surface with plastic wrap.

Chill at least 2 hours until set. When you remove from the fridge, whisk to smooth it out. Do not make me tell you how to make waffles. Buy a box, or dig up grandma’s recipe. And if you don’t have a waffle maker, then just make pancakes. Its no biggie.

Make the waffles while the pastry crème is chilling. Then spoon it over warm waffles and top with fruit.
