Chocolate Lava Cake
Ingredients
1/2 cup (1 stick) unsalted butter
6 oz bittersweet chocolate, roughly chopped
2 whole eggs
2 egg yolks
1/4 cup sugar
Pinch of salt
2 T all-purpose flour
Preparation
Preheat oven to 450°F. Butter and flour four 6-oz ramekins thoroughly.
Melt butter and chocolate together in a double boiler, stirring until smooth. Set aside to cool slightly.
In a medium bowl, beat eggs, egg yolks, sugar, and salt until thick and pale — this takes a couple of minutes of real whisking. Whisk the chocolate mixture into the eggs, then fold in the flour until just combined.
Spoon batter into the prepared ramekins. Bake 12 minutes, until the sides are firm and the center is still soft. Let cool for 1 minute, then place a plate over each ramekin, invert, and unmold. Serve immediately.
