Duck Tacos with Asian Pear & Mango Slaw

So pull your leftover duck out of the fridge and shred whatever meat is left over. You can make a stock with the carcass the same way you do with a chicken. It will be fattier and much richer, but it makes a great broth.

Julienne:

1 Asian Pear

1 Mango

1 small red onion

Dice Very Fine:

1 Serrano Pepper, seeded

1 knot of fresh Ginger

2 T Fresh Cilantro

Peel, Segment and Slice:

1 Pink Grapefruit

Juice & Zest:

1 Lime

Place everything into a bowl and toss with a pinch of salt.

Warm the duck in a hot pan with a dash of soy sauce and a quick splash of rice vinegar.

Layer into tortillas and serve
