Eggplant Bacon

Thinly, thinly slice 1 lb eggplant

Salt and let sit for 1 hour to pull moisture, rinse, drain and pat dry

In a baking dish combine:

1/4c water

¼ cup brown sugar

2 T ACV

1 T EVOO

1 Tbsp Tamari

½ tsp paprika

dash ground red pepper

Add eggplant and let marinate for 1 hour

dehydrate in a 250 degree oven directly on a lightly oiled rack for 90 minutes. Let cool and you will find that the eggplant crisps and will pretend that it is bacon if you eat it right away.
