Grilled White Fish with Cucumber & Feta Salad
Ingredients
For the Fish
4 white fish fillets (cod, halibut, or tilapia)
2 tbsp olive oil
2 cloves garlic, minced
1 lemon, juiced
1 tsp oregano
Salt and pepper
For the Salad
2 cucumbers, diced
1 cup cherry tomatoes, halved
1/2 cup crumbled feta cheese
1/4 red onion, thinly sliced
2 tbsp fresh dill, chopped
3 tbsp olive oil
2 tbsp lemon juice
Salt and pepper
Preparation
Marinate fish in olive oil, garlic, lemon juice, oregano, salt, and pepper for 15 minutes.
Preheat grill or grill pan to medium-high heat.
Grill fish for 4-5 minutes per side until cooked through and flaky.
Meanwhile, combine all salad ingredients in a bowl and toss well.
Serve grilled fish over or alongside the cucumber feta salad.
