Hand Pies
2 ½ c flour
1 t salt
8 T cold butter, cubed
¼ c water, cold
pulse flour and salt in a food processor, then add butter over the top Pulse until mixture resembles bread crumbs. Then add water in slowly until a loose dough forms. Turn out onto a counter or a board and press the dough together into a ball with your hands. Flatten into a disc, cover in plastic wrap tightly and refrigerate for 30 minutes.
Or, buy a can of biscuits and just pop that fucker open.
Fillings:
Blueberry Ginger:
½ c sugar
2 T cornstarch
1/3 c water
1 t fresh ginger, grated
2 c blueberries, fresh or frozen
2 t lemon juice.
Put it all in a pan, people and let it simmer and reduce until thick. Mix cornstarch and water, add to the blueberry compote and stir until a jam like consistence is achieved.
Peach:
2 peaches, skinned, pitted and sliced
½ c sugar
1 T lemon juice
1 T cornstarch
1 T water
1 T butter
½ t cardamom
Boil a pot of water and cut X shapes into the bottom of the peaches. Drop them into the boiling water for about 30 seconds, then plunge into a bowl of ice water. This will release the skins so you can slip the skin off easily.
Slice peaches in half around the equator and twist gently to separate the haves. Pry the pit out. Then slice the peaches and place in a pan with sugar, lemon, and cardamom. Simmer until peaches have softened and sugar is absorbed, about 5 minutes. Mix cornstarch and water, add to the peaches and stir until a thick consistence is achieved. Remove from heat and stir in the butter. Allow to chill.
Apple:
2 apples, peeled, cored and cubed
½ c sugar
2 T cornstarch
1/3 c water
2 t lemon juice
½ t cinnamon
Same process with the fruit. You can do this with almost any fruit.
Divide dough into 6 pieces, then roll each piece into 5 inch circles. Place filling into the middle, leaving a 1 inch rim around the edge. Do not over fill. Fold over and seal with water, crimping edges.
Fill a dutch oven with oil about 2 inches deep. Heat to 325. Fry gently, 4-5 minutes on each side. Remove and allow to drain on paper towel.
