Kitchen Sink Fried Rice
Y’all. This is such a lazy meal. Its for when everybody you feed answers, “What do you want for dinner?” with “I don’t know.” Then this is what you get, bitches. Everything I could find in the fridge that fits into one damn pan.
Truthfully, this works best with leftover rice. Day old, cold rice. Sadly, in my house nobody ever leaves rice, so you can, indeed, use fresh rice It just takes longer to make dinner. It also is very well suited to a fridge clean-up, so if you have veggies that are sneaking their way towards the compost bin, use them here. A few veggies are required so I listed them out specifically. But for the most part, its not a fussy dish. So get frisky with whatcha got.
Heat up a large pan over medium high heat with a healthy dallop of olive oil. Sautee:
1 medium onion, chopped
2 cloves garlic, chopped
**If you are adding meat, add it here. Thinly sliced meats work best.
When they are soft, add:
1 egg, whipped, and scramble.
Then add all of your veggies (I like peas, bok choy, corn and mushrooms) to the pan with 1-2 cups of cooked rice. Keep the heat medium low and stir constantly, adding a bit more oil.
Season with:
2 shakes Soy sauce
2 shakes Teriyaki Sauce
1 shake Fish Sauce
If you don’t have all three, just work with what you got.
