Kitchen Sink Soup

Ingredients

2 tbsp olive oil

1 onion, diced

3 carrots, chopped

3 celery stalks, chopped

4 cloves garlic, minced

Any leftover vegetables you have on hand (potatoes, zucchini, tomatoes, etc.)

6 cups vegetable or chicken broth

1 can (15 oz) diced tomatoes

2 cups cooked beans or lentils (optional)

Fresh or dried herbs (thyme, rosemary, bay leaf)

Salt and pepper to taste

Preparation

Heat olive oil in a large pot. Sauté onion, carrots, and celery until softened, about 8 minutes.

Add garlic and cook for 1 minute.

Add all other vegetables, broth, tomatoes, and herbs. Bring to a boil.

Reduce heat and simmer for 30-40 minutes until vegetables are tender.

Add beans if using, season with salt and pepper, and serve hot.
