Quesadilla

These are the best of the best when it comes to feeding fussy people. You can literally cram almost anything leftover in here and call it a new meal. And it always tastes good because, hello, its smothered in cheese.

Warm up a pan to medium heat with a touch of oil in it. If you have a skillet, that works great. If not, a pan is just fine. Lay in the tortilla and cover it with cheese. A lot. All the way to the edges. Staying at a gentle heat, you want the cheese to just begin to show signs of melting before you add in any vegetables or meat.

Anything you add will need to be warm and cooked through. It will not get hot in the center if you put it in cold.

Using a spatula, fold the tortilla in half and press lightly down. This lets the cheese stick to itself. Flip immediately. I like to keep mine moving at this point, pressing down occasionally until the tortilla itself is a golden brown and the cheese is melted through.

Slide from the pan and slice into thirds.
