Very Veggie Shepherds Pie.

You can completely add meat to this, so once the veg is cooked, just throw in your meat. If you don’t have meat, or don’t want it, this dish works very well as a vegetarian experience.

1 onion, chopped

2 cloves garlic, chopped

10 brussels, chopped

broccoli, chopped

mushrooms, chopped

bag of your mixed vegetables

Put all the veg in a pan and sautee. Add meat here and cook if you are inclined. Salt with a finger pinch.

Boil 3 peeled potatoes and a whole cauliflower until soft. Drain. Make some mashed ‘potatoes’ by adding a chunk of butter and a splash of milk and going to town with the beaters or masher. The cauliflower will make it a bit more sticky that regular potatoes, so I prefer the masher.

Layer the veggie mixture in the bottom of a large baking dish. Spread the mash over the top. Give it a sprinkle of garlic salt.

Bake at 350 for 20 minutes or so, or until the top gets a little toasty and you can see the bottom bubbling.
