Don’t roll your eyes at the chicken. I know. We always start with an f’n chicken. I promise you that as we go on, you will see less chicken. But know that I start with a chicken because it feeds more than a few people for more than a few meals and then the stock can carry you over for a few weeks. There is nothing more versatile than a good chicken stock. So bear with me, here, and just cook the dang chicken.

5 lb Whole Chicken Portabello Mushroom Caps x4

Oyster Mushrooms Asparagus

Green Pepper Red Pepper

Tofu Bean Sprouts

This menu is designed to be a zero leftover situation. By the time you reach the end of the week, you should have been able to repurpose the earlier dishes into new meals. The shopping list is coming in at 80$ for a family of four, although I did choose some organic options so you may be able to find it all cheaper.
